Tea and Scones and Honey all round



When I was little we used to have these at least four times a week in the afternoon with jam and honey and butter. Yummeroo

2 c. sifted flour
2 tablespoons sugar
3 tablespoons baking powder
1 teaspoon salt
1/3 c. butter
1 egg
3/4 c. milk

1. Preheat the oven to hot (425)
2. Sift together the flour, sugar, baking powder and salt
3. Chop in butter with a pastry blender until the flour coated particles of butter are the size of coarse oatmeal.
4. Ads the egg and about three-quarters of the milk. Stir quickly and lightly only until no flour shows. Add more milk if needed to make a soft dough.
5. Turn the dough out on a floured surface and knead gently about fifteen times. Cut the dough in half. Shape each half into a ball, press down into a round about one-half inch thick and cut into eight wedges like a pie.
6. Place the wedges on a greased cookie sheet without allowing the sides to touch. Bake until deep golden brown, about twelve minutes.
7. Eat all sixteen by yourself. Maybe share with a sister or a daughter or a friend. If you love them a lot.
